Quick Chicken Stir Fry
Stir frying is fast cooking over very high heat in a wok or large skillet. The technique demands prep before flame: slice all ingredients ahead, mix the sauce, and have everything within arm's reach. Once the wok hits temperature, you have less than 6 minutes from start to plate. Common mistakes: overcrowding the pan (steams instead of sears), cooking everything together (some ingredients overcook), and using cold meat (drops pan temp).
