The fudgy-vs-cakey debate: fudgy brownies use more fat and less flour, eggs whipped briefly. Cakey ones use more flour and baking powder. This is fudgy. Crackly top = sugar dissolving in beaten eggs. Don't overbake — slightly underdone in the center is correct.
