Hearty Beef Stew
A great beef stew is built on a foundation of browning. Don't rush this step — the Maillard reaction (those caramelized brown bits) is where 60% of the flavor comes from. Use chuck roast, not lean cuts; chuck has the connective tissue that breaks down into gelatin during slow cooking, giving stew its body. Two hours minimum. Three hours is better.
